Etymology: < Kobe, the name of the capital city of Hyogo Prefecture in Japan, famed for the quality of its beef.With Kobe beef at main sense compare Japanese Kōbe-gyū Kobe beef (lit. ‘Kobe cattle’; compare -gyū < Middle Chinese); also often called Kōbe-biifu (with the second element < English beef n.).
A type of high-quality tender marbled beef with a high proportion of unsaturated fat, originating in the area around Kobe. Also: the Tajima breed of Wagyu cattle from which this is obtained. Frequently attributive, esp. in Kobe beef. Cf. Wagyu n.
