Etymology: < Yiddish glat kosher strictly kosher < glat smoothly, (in extended use) strictly, completely, use as adverb of glat smooth ( < Middle High German glat smooth: see glad adj.) + kosher ( < Hebrew kāšēr : see kosher adj.).With the semantic motivation of the first element, compare the fact that German glatt has long (since the 16th cent.) had the extended sense of ‘outright’ or ‘complete’, and (as adverb) ‘strictly’ or ‘completely’, which has become more prominent in Yiddish. An alternative explanation offered by S. Steinmetz (in Amer. Speech 56 (1981) 9; repeated in Yiddish & English (1986) 95), which refers to the necessity that the slaughtered animal have flawless or ‘smooth’ lungs, is much less plausible.
