Etymology: < Italian focaccia (late 14th cent.) < post-classical Latin focacia (feminine) bread baked in the hearth (9th cent.), alteration (reflecting reinterpretation of neuter plural as feminine singular) of the plural of focacium , neuter (Vetus Latina), use as noun of neuter of focacius (a636 in Isidore in panis focacius , lit. ‘bread baked in the hearth’) < classical Latin focus hearth (see focus n.) + post-classical Latin -acius , alteration of classical Latin -āceus (see -aceous suffix).Compare the following earlier attestations of the Italian word in an English context:1841 tr. ‘Valery’ Italy & its Comforts vii. 58 Mutton from Monselice;..excellent sweetmeats (focaccia).1892 Sunday at Home 20 Aug. 671/1 ‘Polenta! focaccia! maccheroni! caffe! pan fresco!’ cried the children with bated breath. ‘Eat, my children. One cake each.’ In plural form focaccie after the Italian plural form.
