Etymology: < classical Latin anser goose (see anserine adj.) + -ine suffix5, after German Anserin (D. Ackermann et al. 1929, in Zeitschr. f. Physiol. Chem. 183 1).
Biochemistry.
A crystalline compound with antioxidant properties originally isolated from goose muscle and present in birds and some other vertebrates.Anserine is a dipeptide, a methyl derivative of carnosine. Systematic name: β-alanyl-N-methylhistidine; C10H16N4O3.
