Etymology: < Japanese anago any of various kinds of saltwater eel (1540 or earlier) < ana hole + -go, variant combining form of ko child, offspring (with diminutive force), so called because congers typically conceal themselves in cracks and holes when not active.The Japanese word for the white-spotted conger is ma-anago, literally ‘true saltwater eel’ (i.e. the kind regarded as most characteristic).

In Japanese cookery: the flesh of any of various saltwater eels (esp. the white-spotted conger, Conger myriaster) used as food, now esp. in sushi or tempura dishes. Also: a dish made with this as the principal ingredient.
