Origin: Formed within English, by compounding; originally modelled on an Italian lexical item. Etymons: cryo- comb. form, extraction n.
Etymology: < cryo- comb. form + extraction n., originally after Italian crioestrazione (1961 or earlier). With sense 2 compare slightly earlier cryoextractor n.
1. Winemaking. The practice of cooling grapes to a point where unripe grapes freeze, thus yielding juice only from the ripest fruit when pressed, and used esp. in the artificial production of ice wine.

Through the selective freezing of grapes prior to pressing, it has been found that there is an increase in the sugar levels of the resulting juice.
