1877 E. S. Dallas Kettner's Bk. of Table 122 Chiffonnade..usually means a selection of vegetables, nicely cut, served in a good consommé; but sometimes, instead of a consommé, the French serve them in a green-pea soup.
1907 G. A. Escoffier Guide Mod. Cookery i. viii. 89 The name ‘Chiffonade’ is given to a mince of sorrel or lettuce, intended as a complement for..soups.
