Etymology: < chicken n. + à la prep. + the surname King. With the formation perhaps compare à la reine at reine n., used at an earlier date to designate various dishes with creamy sauces.Identity of eponymous individual. Various suggestions have been made for the identity of the individual whose name gave rise to this word. Two possible candidates are William King (d. 1915), chef at the Hotel Bellevue (later Hotel Bellevue-Stratford) in Philadelphia c1895, and E. Clark King II, proprietor of the Brighton Beach Hotel, New York c1902–12, whose chef George Greenwald is credited with making the dish for his employer (in accounts going back to at least 1926). Although conclusive evidence has not been found to support either of these explanations, early documentation appears narrowly to favour the former. Attribution of the recipe to William King is recorded from an earlier date (in newspaper reports of the chef's death from 1915), as is connection with the hotel in which he worked; compare:1907 E. A. Contributed by French Chef of Hotel Bellevue-Stratford.Archived menus show that chicken à la King was also served at the Waldorf Astoria in New York from at least 1905, and the number of early instances of the word that mention its association with this fashionable hotel suggests that it played a role in popularizing the dish; compare e.g.:1905 Baltimore Sun 27 Feb. 9 One of the favorite luncheon dishes now being served in the Waldorf-Astoria is chicken a la king.1911 Good Housek. Melt two tablespoons of butter and sauté in this half of a green pepper.This connection may also indirectly support an etymology from the name of William King: the Hotel Bellevue was established in 1881 by the same hotelier—George Boldt (1851–1916)—who went on to become proprietor of the Waldorf (1893; merged with the Astoria 1897), and it seems plausible that a recipe invented at one of Boldt's hotels would come to be used in the other. However, evidence to support this case is far from conclusive, and the story may be apocryphal. It has alternatively been suggested that the dish was originally named in honour of an individual with the surname Keene (variously identified as U.S. sportsman and racehorse owner Foxhall P. Keene (1867–1941), or his father, stockbroker and racehorse owner James R. Keene (1838–1913)), the current form in King being explained as a later alteration. However, the surviving written evidence does not appear to support this chronology: no record has been found of chicken à la Keene (1939 or earlier) until considerably later than chicken à la King, and it is rarely attested outside discussions of this word's etymology. Possible evidence for earlier currency. Compare the following earlier example of chicken a la King in an account of a celebration dinner held on 13 December 1893 for the Princeton College football team after their victory in the annual Yale–Princeton match, the menu for which featured dishes bearinɡ the surnames of each of the team's eleven players (e.g. team captain Thomas G. Trenchard, left halfback William D. Ward, and quarterback Phil King):1893 Boston Daily Globe 14 Dec. 7/7 The menu comprised the following: Green turtle a la capitaine Trenchard, chicken a la King, small patties a la Ward, [etc.].As no indication is given what kind of dish is denoted by chicken a la King here, it is unclear either whether it is to be taken as evidence either for earlier currency of this word in the sense documented below or for the identity of the eponymous individual that gave rise to it. For instance, it is impossible to be sure whether this example shows an independent one-off coinage, made for the occasion from the player's surname (as the names of other dishes on this menu appear to be), or whether it shows the name of a pre-existing dish with a different origin, chosen for this menu for its correspondence with the surname of the quarterback.
