Origin: A borrowing from German. Etymon: German Cellobiase.
Etymology: < German Cellobiase (H. Pringsheim & G. Zemplén 1909, in Hoppe-Seyler's Zeitschrift für Physiologische Chemie 62 370) < Cellobi- (in Cellobiose cellobiose n.) + -ase -ase suffix.
Biochemistry.
An enzyme that catalyses the hydrolysis of cellobiose into glucose. Cellobiases (also called β-glucosidases) act on terminal 1,4-β-D-glucoside linkages in cellulose.

1934 C. C. Steele Introd. Plant Biochem. iii. x. 99 An enzyme lichenase also occurs in plants which will hydrolyse lichenin to cellobiose, but if the enzyme cellobiase is present as well, glucose is the product.

Carbohydrate Engin. xxiv. 648 Since fungal β-glucosidases are responsible for the hydrolysis of cellobiose and the saccharification of cellulose, these enzymes have also been called cellobiases. This name, however, is misleading, since it suggests a high substrate specificity for cellobiose.
