Make a well in the centre of the dry ingredients, add the hot liquid and mix thoroughly.

Slowly incorporate into the hot liquid as per recipe.

Add the basil to the hot liquid and leave to infuse until cool.

It will wilt to fit, but give it a little persuasion by pushing it into the hot liquid with a wooden spoon.

Place the plums in the hot liquid and bring back to the boil.
