A type of sorbet containing fruit juice or wine, whipped egg white, and syrup.
1907G. A. Escoffier Guide Mod. Cookery (1959) 758 Spoom is a kind of sherbet prepared from a syrup at 20°. 1929E. J. Kollist French Pastry, Confectionery, & Sweets xii. 202 Spoom, the ingredients and preparation are the same as Sorbet. 1961N. Froude et al. Montagné's Larousse Gastronomique 536/1 Spooms are made from fruit juices or wines... They are served in glasses, like sherbets. 1982N.Y. Times 24 Mar. c15/3 A menu from the Elysée Palace in honor of the King and Queen of Spain in 1905 continued for 29 courses, including something called ‘spoom of cherry brandy’, which was like a sorbet.
