Béarnaise (beɪɑːˈneɪz, ‖ bearnɛz) [Fr., fem. of béarnais of Béarn, a region of south-western France.] Béarnaise sauce, also in Fr. form sauce béarnaise, a rich white sauce flavoured with tarragon.
