phytase Biol.|ˈfaɪteɪz, -s| [a. G. phytase (U. Suzuki et al. 1907, in Bull. College Agric. (Tokyo Imperial Univ.) VII. 503): see phyt- and -ase.] Any of a class of enzymes found esp. in cereals and yeast which convert phytic acid to myo-inositol and phosphoric acid.
1908Jrnl. Chem. Soc. XCIV. i. 236 The change is shown to be due, not to putrefaction, but to an enzyme, phytase, which was isolated from rice bran and wheat bran. 1931E. C.
