lipase Biochem.|ˈlɪpeɪz, -s| [a. F. lipase (A. A. M. Hanriot 1896, in Compt. Rend. CXXIII. 753), f. Gr. λίπ-ος fat: see -ase.] Any enzyme which catalyses the hydrolysis of fats and oils to fatty acids and alcohols; esp. one present in the pancreatic juice.
