glucosinolate, n. Biochem.|gl(j)uːkəʊˈsɪnəleɪt| [f. gluco- + mod.L. generic name Sin-apis (see mustard n. 2 a) + ol- (perh. f. L. oleum (olive) oil) + -ate4.] Any of a class of toxic glucosides, produced by some brassicas, which yield mustard oils on ingestion.
