galactase Biochem.|gəˈlækteɪz, -eɪs| [f. galacto- + -ase.] A proteolytic enzyme present in the milk of many animals.
1898Proc. Amer. Assoc. XLVII. 232 The authors [sc. S. M. Babcock and H. L. Russell]..discovered an inherent proteolytic ferment in milk, to which they have given the name galactase. 1901C. A.
