[Sp., lit. ‘rancid, mature’, f. L. rancidus.]
A. adj. Of wines: having the distinctive bouquet, nutty flavour, or tawny colouring characteristic of certain well-matured, fortified, or dessert wines.
B. ellipt. as n. A wine of this kind.
1851C. Redding Hist. Mod. Wines (ed. 3) vi. 151 Good Grenache wine is..ten or twelve years attaining full perfection.
